A spreadsheet extracts differently from a document: the useful output is rows and typed cells rather than prose. Formatted values come out as the author would read them, and the raw number is still there underneath for anything that needs to compute with it.
The workbook’s cached values are authoritative and used as such; the formula engine is there for the rules that have no cached result.
